Ingredients

For the Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp taco seasoning
  • ½ tsp garlic powder
  • Salt and black pepper, to taste

For the Slaw

  • 2 cups shredded purple cabbage
  • 1 tbsp fresh lime juice
  • Pinch of salt

For the Creamy Avocado Lime Sauce

  • 1 ripe avocado
  • ¼ cup sour cream or plain Greek yogurt
  • 2 tbsp fresh lime juice
  • ¼ cup fresh cilantro
  • 1 garlic clove
  • Salt, to taste
  • Splash of water, as needed

For Serving

  • 8 low-carb tortillas
  • Fresh cilantro, chopped
  • Lime wedges (optional)

Instructions

1. Roast the Shrimp

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Place the shrimp on the prepared baking sheet. Drizzle with olive oil and season with the taco seasoning, garlic powder, salt, and black pepper. Toss until evenly coated and spread into a single layer.

Bake for 8–10 minutes, or until the shrimp are pink, opaque, and cooked through.

2. Prepare the Slaw

While the shrimp roast, combine the shredded cabbage, lime juice, and a pinch of salt in a medium bowl. Toss well and let the slaw sit for a few minutes to soften slightly while retaining its crunch.

3. Make the Avocado Sauce

Add the avocado, sour cream or Greek yogurt, lime juice, cilantro, garlic, and salt to a blender or food processor. Blend until smooth, adding a splash of water as needed to reach your preferred consistency.

4. Assemble the Tacos

Warm the tortillas in a dry skillet or microwave until soft and pliable.

Fill each tortilla with a generous layer of cabbage slaw, followed by the roasted shrimp. Drizzle generously with the creamy avocado lime sauce and garnish with fresh cilantro.

Serve immediately with lime wedges for an extra burst of citrus.

Tips

  • Pat the shrimp dry before seasoning to help them roast instead of steam.
  • Greek yogurt creates a lighter, higher-protein sauce while still delivering a creamy texture.
  • For extra heat, add sliced jalapeños or a drizzle of your favorite hot sauce.
  • Leftover avocado sauce is delicious as a dip for vegetables or a spread for sandwiches.
