👩‍🍳 How to Make It

1. Prepare the Sheet Pan

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Roast the Flounder

Pat the flounder fillets dry with paper towels. Brush both sides with olive oil, then season evenly with Old Bay seasoning, garlic powder, smoked paprika, salt, and black pepper.

Arrange the fillets on the prepared baking sheet and roast for 10–12 minutes, or until the fish flakes easily with a fork and the edges are lightly crisp and golden.

3. Make the Jalapeño Apple Slaw

While the fish bakes, combine the shredded cabbage, julienned apple, sliced jalapeño, apple cider vinegar, honey, and a pinch of salt in a bowl. Toss until evenly coated and let the slaw rest for a few minutes to develop its bright, tangy flavor.

4. Prepare the High-Protein Old Bay Crema

In a small bowl, whisk together the Greek yogurt, mayonnaise, Old Bay seasoning, fresh lemon juice, and hot sauce until smooth, creamy, and well blended.

5. Toast and Assemble

Butter the cut sides of the brioche slider buns and toast them in a skillet until golden brown. Spread a generous layer of the Old Bay crema on both halves of each bun. Add a roasted flounder fillet, then pile the jalapeño apple slaw on top.

6. Serve Immediately

Serve the sliders while the fish is hot and the buns are warm. Pair with baked fries, potato chips, or a crisp green salad for a complete meal.
