These Garlic Butter Sweet Chili Cod Bites are crispy on the outside, tender and flaky on the inside, all coated in a rich garlic butter and sweet chili glaze. This quick pan-seared cod recipe is perfect for busy weeknights, delivering bold flavors in just 20 minutes with minimal ingredients.
π Ingredients:
Cod:
- 1 lb cod fillets, cut into wide strips or large chunks
- 3 tbsp butter, divided
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
The Sticky Glaze:
- 4 tbsp sweet chili sauce
- Juice of 1 fresh lime
- 1 tsp soy sauce
- 1 tsp honey (optional)
- 1 tsp fresh grated ginger (optional)
π©βπ³ How to Make It:
1. Season the Cod
Pat the cod completely dry with paper towels to help it develop a beautiful golden crust. Season all sides evenly with paprika, salt, and black pepper.
2. Prepare the Sweet Chili Glaze
In a small bowl, whisk together the sweet chili sauce, fresh lime juice, soy sauce, honey, and grated ginger until smooth. Set aside so it’s ready to use.
3. Sear the Cod in Garlic Butter
Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the minced garlic and cook for about 30 seconds until fragrant. Arrange the cod in a single layer and sear for 2β3 minutes per side until lightly golden and just cooked through.
4. Coat with the Sticky Glaze
Reduce the heat to medium-low and stir in the remaining butter. Pour the prepared sweet chili glaze into the skillet and simmer for 1β2 minutes, gently spooning the glossy sauce over the cod until every piece is well coated.
5. Serve Immediately
Remove the skillet from the heat once the cod flakes easily with a fork. Spoon the remaining garlic butter sweet chili sauce over the fish and serve immediately with steamed rice, roasted vegetables, or a fresh salad.
