1. Prepare the Filling
Preheat the oven to 425Β°F (220Β°C). In a large bowl, combine the chopped shrimp, shredded purple cabbage, cilantro, spring onions, sesame oil, and soy sauce.
For the Mango-Chili variation, gently fold the diced mango and red chili flakes into the shrimp mixture.
2. Roll the Rice Paper
Dip each rice paper wrapper in warm water for about 5 seconds until just pliable. Place it on a clean surface, add about 2 tablespoons of filling to the center, fold in the sides, and roll tightly.
3. Add the Optional Coatings
